TRIP - PA dell' Officinasegreta


Signore e Signori la Trippa fatta come mi pare e come mi piace e come capita con quello che c'è in dispensa!!!
Insomma oggi l'ho fatta così!!

Per le 2 proverbiali persone affamate:

mezza cipolla
una carota
uno spicchio di aglio
un gambo di sedano
300 gr di funghi misti freschi
800 gr di Trippa di bovino
prezzemolo fresco
210 gr di polpa di pomodoro
250 gr di fagioli bianchi
una punta di salsiccia
una spruzzata di vino rosso


Innanzi tutto è preferibile comprare la Trippa già lavata e bollita, altrimenti dovete pulirla raschiandola con un coltello o cucchiaio lavandola con acqua molto calda e successivamente bollirla per circa 3 ore con un po' di sedano e carota.
Direi che è meglio prenderla già pronta all'uso!!

Disponete in una padella ampia un trito di mezza cipolla, una carota, uno spicchio d'aglio, prezzemolo fresco a piacere e una punta di salsiccia (o guanciale o pancetta o anche niente se non ne avete).
Lasciare soffriggere in un cucchiaio di olio di oliva fino a fare imbiondire la cipolla ed aggiungere i funghi ben lavati e tagliati a fettine.
Fare tirare (non completamente) il liquido che si produce dalla cottura e spruzzare un po' di vino rosso.
Fare asciugare ancora a fuoco medio fino a  che si aggiunge la polpa di pomodoro (aggiungete 1/4 di bicchiere di acqua) e se vi piace un po' di peperoncino.
Fate cuocere a fuoco lento almeno 5 minuti.
A questo punto aggiungete i fagioli: adoro quelli bianchi di Spagna insieme alla Trippa, altrimenti anche quelli Cannellini vanno bene, in ogni caso sgocciolati se in scatola.
Fate cuocere fino alla densità preferita o fino a cottura dei fagioli che devono rimanere integri.

Personalmente ho disposto due fette di pane tostato alla base ed ho servito con la Trippa sopra.
La spruzzata di vino l'ho messa nella ricetta, il restante bicchiere me lo sono bevuto insieme alla Trippa!!

Ladies and Gentlemen, the Tripe done as I want and how I like it and like it happens with what's in the pantry !
So today I made it so !

For 2 proverbial starving people :

half onion
a carrot
a clove of garlic
a stalk of celery
300 grams of mixed fresh mushrooms
800 grams of beef tripe
fresh parsley
210 grams of tomato pulp
250 grams of white beans
a bit of sausage
a splash of red wine


First of all it is better to buy the tripe already washed and boiled , otherwise you have to clean it by scraping it with a knife or spoon washing with very hot water and then boil it for about 3 hours with a bit  of celery and carrot.
I would say that it is better to get it ready for use!

Arrange in a large skillet chopped half an onion, a carrot, a clove of garlic, fresh parsley and a bit of sausage (or bacon or even nothing if you do not have).
Allow to fry in a tablespoon of olive oil to make fry the onion and add the mushrooms, well washed and cut into slices.
Let dry (not completely) the liquid that is produced by cooking and sprinkle a little bit of red wine .
Allow to dry again over medium heat until you add the chopped tomatoes ( add 1/ 4 cup of water) and if you like a little bit of chili .
Let simmer at least 5 minutes.
Now add the beans : I love the white Spain ones together with tripe , or even those Cannellini are fine, in any case, drained if canned.
Cook until the density favorite or until cooked beans that must remain intact.

Personally, I have placed two slices of toast bread at the base and I served with the tripe above.
I put it in the recipe the splash of wine and I drunk together with tripe the remaining part of the glass!
